Toucinho do céu is one of the finest examples of Portuguese convent pastry. Originating from the Convent of Santa Clara in Guimarães, this dense, moist cake is made with ground almonds, egg yolks and sugar. The curious name ("heaven's bacon") refers to its religious origin — a sweet so sublime it could only come from heaven. It testifies to the creativity of Portuguese nuns in using egg yolks.
