About Suspiro
The suspiro (sigh) is one of pastry's most poetic preparations — made only with beaten egg whites and sugar, slowly dried in the oven. Light as air and sweet as a kiss, the name "sigh" is perfect. In convent pastry, suspiros were the counterpoint to yolk recipes — while yolks made sweets, whites made sighs. At A Pharmácia da Avó, suspiros evoke the delicacy and simplicity that define us.
